I just wanted to make a general comment on your Napa cabbage kimchi recipe. I finally got the ingredients together and followed the recipe to a T. The only problem I have with it, the kimchi is so delicious while it's fresh, it's hard to leave any to ferment! Next time I will have to make a double batch.

I'm going to try the green plums. Do they need to be Korean plums or can I pick green plums from a tree here. I also want to try the spicy fish recipe.

You need to find maesil at a large Korean grocery store. Maesil is a type of fruit, commonly known as green plums or Japanese apricots. However, it's not exactly the same as the plums we are familiar with. Its season is short, typically in May or June. https://www.maangchi.com/ingredient/maesil

Maesil is often used in Korean cuisine to make maesil-cheong (plum syrup) or maesil-ju (plum wine).
